Chocolate Protein Flapjacks (Blender)
These gluten free protein flapjacks are everything you want in a breakfast. Soft and comforting, the secret to their delicious texture is our authentic Greek yoghurt from our local cheesery that uses handcrafted, artisanal methods and simple ingredients.
Made the traditional way, this specialty yoghurt adds a tangy flavor that is delicious in this batter.

This recipe was developed as a high protein breakfast by Casey The Roasted Rose, a hormone health-certified chef. One batch delivers just under 50g of protein and makes about 8-10 flapjacks.
Adjust the consistency of the batter: You need a runny, pourable batter for the perfect pancake. Add more yoghurt if you need to.
Use heat-stable protein powder: This prevents grittiness and keeps the protein flapjacks fluffy. This recipe was made with heat stable protein powder from Metalab.
Blend but don’t overmix: Smooth batter equals tender protein flapjacks, but it shouldn’t blend for more than a few seconds.
Cook on medium heat: Gives a golden crust without drying them out.
Flip only once: Wait for bubbles to appear before turning for the perfect rise.
Customise your flavours: Add vanilla, cinnamon or orange zest.
Serve immediately: Fresh from the skillet is when the texture and flavour shine.
These protein flapjacks are best enjoyed fresh. This is because they are made with gluten-free flour, so they won’t stay fluffy for as long as those made with regular flour will.
If you must store them, cool completely and refrigerate in an airtight container for up to 1 day, reheating gently in a pan or microwave.

Ingredients
3 TBS (40g) The Gourmet Greek yoghurt
½ cup (60g) chocolate protein powder, heat-stable
⅓ cup (50g) gluten-free flour
1 tsp cocoa powder (optional)
1½ tsp baking powder
⅓ cup (80ml) milk of your choice
3 TBS (40g) butter, melted and cooled
2 eggs, room temperature
1 TBS butter (for the pan) or spray
Instructions
Blend all ingredients together until smooth.
Heat a skillet to medium heat and grease with butter or spray.
Cook in small batches, flipping once bubbles appear on the surface.

FAQ
Can I make them without protein powder?
Yes, but you’ll lose the protein boost. Replace with extra cocoa powder and a touch of sweetener.
Do I have to use gluten free flour?
Not at all. You can use regular flour for the same measurements.
